Deep-fried Beef 

Ingredients (4 Servings)

Beef round 400g
Firm tofu 1/2 a block
Green pepper 8
Shiitake mushroom 4
Green spring onion 2
Ginger 1
Radish 1/4
Wheat flour (glazing) Appropriate amount
Cooking oil Appropriate amount
Potato starch
(beef glazing)
Appropriate amount
Mirin
(sweet rice wine)
1 tablespoon [A]
Miso 1 tablespoon [A]
Sugar 1 tablespoon [A]
Ginger juice 1 teaspoon [A]
Grated apple juice 1 tablespoon [A]
Sake (alcohol) 2 tablespoons [A]
Soy sauce 1 and 1/2 tablespoons [A]
Soup stock 1 cup [B]
Light soy sauce 2 tablespoons [B]
Mirin
(sweet rice wine)
2 teaspoons [B]
Sake (alcohol) 2 tablespoons [B]

Instructions

  1. Cut the beef to a size that is easy to eat and then soak for a while in the thoroughly pickled sauce of [A].
  2. Remove the stems from the green peppers and place a cut in one place. Strain the tofu to remove any water.
  3. Remove the ends of the shiitake mushrooms and cut in half.
  4. Grate the ginger and cut the spring onion small. Peel the radish and then grate.
  5. Drain the water of the beef soaked in the sauce. Next, add the potato starch.
  6. Cut the drained tofu to bite-sized pieces that has a thickness of around 1cm and then sprinkle with the wheat flour.
  7. Also sprinkle the wheat flour on the green peppers and shiitake mushrooms.
  8. Deep-fry each of the green peppers, shiitake mushrooms, tofu and beef.
  9. Make the soup of [B] and then serve (3) in a bowl. Next, arrange the grated radish, ginger and green spring onions. Finally, pour over the boiled soup.

★ Notes★
● Deep-fry the beef in a short time so that the heat does not pass completely through.
● Use meat with thickness, such as meat for grilling, rather than sliced beef.
