Southern-style Beef Salad

Ingredients (4 Servings)

Beef topside
(thin sliced)
Onion (sliced) 2 onions
Diced pepper
(red and yellow)
Diced Chinese yam 1/2
(small strips)
Appropriate amount
Lettuce (leaf) 4
Mustard (dressing) Appropriate amount
Cherry blossom chips Appropriate amount [Smoking A]
Rosemary and thyme Appropriate amount [Smoking A]
Marjoram Appropriate amount [Smoking A]
Mango 1/2 [Sauce B]
Sugar 6 tablespoons [Sauce B]
Lemon juice 4 tablespoons [Sauce B]
Salt Appropriate amount [Sauce B]
Black pepper
(coarsely ground)
Appropriate amount [Sauce B]


  1. Sprinkle the salt and pepper over the beef and lightly cook both sides to give it color.
  2. Smoke the meat of (1) for 5 minutes with [Smoking A]. Then, cool with cold water and remove the water.
  3. Cut the onions, peppers, carrots and mustard and then soak separately in water. Cut the Chinese yam and put into a ball.
  4. Make the ingredients of [Sauce B] into a paste with a mortar and then cool in a refrigerator.
  5. Arrange the lettuce and serve.

● Soak the onions and carrots in salt water.
● Add the mango, sugar and lemon juice in that order for the sauce.
